Immune Boosting Energy Ball Recipe
These immune boosting, refined sugar-free energy balls created by Dr. Shah use ingredients to help support our immune system during cold and flu season. Coconut oil is anti-inflammatory and contains MCT oil. Ashwagandha supports your adrenals, immune system, and thyroid health and goji berries are rich in vitamin C and antioxidants. I think you will agree they are perfect for everyday snacking.
Ingredients:
15-18 dates, pitted
1/3 cup almonds
1/4 cup melted and cooled coconut oil
2 tbsp chia seeds
1.5 tbsp Organic Traditions Ashwagandha powder
¼ cup goji berries
1 tsp unpasteurized cinnamon-honey (regular, unpasteurized honey is okay and you can add more honey if you find it too bitter from the ashwagandha powder)
Unsweetened, shredded coconut
Makes 12 balls
Method:
- Add dates, almonds, coconut oil to a chopper and blend until almonds are chopped.
- Add the chia seeds, ashwagandha powder, goji berries and honey and pulse until mixture becomes minced in appearance and sticky.
- Form into balls and coat with the shredded coconut. The mixture may be a bit oily to work with due to the coconut oil. If you would like, you can refrigerate the mixture for a couple minutes to make it firmer to work with.
- Store balls in the refrigerator or in a cool place to avoid the balls from becoming very soft due to the coconut oil.
