THE LOAF – DR. SARAH KENT

This recipe is too good not to share.  From health enthusiast Cory, this loaf will satisfy your hunger and taste buds while providing a low glycemic, protein rich, gluten and dairy free snack.  Add you favourite nut butter or molasses for an additional tasty experience.  Thanks Cory!

Preheat oven to 350˚C.the loaf
In a mixer, add the following ingredients in order given.
  • 1 scoop protein (I use egg white)
  • 1 cup pumpkin
  • 2 cups ground flaxseed
  • 5 EW
  • 2 eggs
  • 5 tbsp coconut oil
  • 1 tbsp baking powder
  • 1/2 cup water
  • 1 tsp stevia
  • 1 tsp butter flavouring
  • 1 tbsp cinnamon
Bake for 50 min in loaf pan. Let cool.  Enjoy 🙂
